Methu vada/ Ulunthu vada

Ingredients:
Urad dal(ulunthu) - 1 cup
Onion small finely chopped - 1
Green chili finely chopped- 2
Curry leaves - 1 tbsp finely chopped
Coriander leaves - 3 to 4 sprigs
Salt - to taste
Oil - to deep fry vadai
Jeera - 1.5 tsp crushed

Method:
  1. Soak Urad dal for at least an hour. Drain the water completely and grind till it gets fluffy texture.
  2. Add water little by little while grinding.
  3. Once the batter is ready, add all the other ingredients and mix well.
  4. Let the batter sit for 10-15 minutes.
  5. Wet your palm with little water. Take a small amount of batter, flatten it lightly, shape them into round and make a hole in the center.
  6. Drop it carefully into hot oil, turning once in a while, deep fry till golden brown.
   
Tip:
If the vadai batter becomes little watery,add a tbsp or more of rice flour. But it will reduce the taste.
So leave the watery batter overnight in fridge to remove the excess water.
