Yellow Pumpkin Poriyal

Seasoning:
Mustard seeds - 1/2 tsp
Channa dal/Kadalai parupu - 1 tsp
Cumin seeds - 1/2 tsp
Hing - a generous pinch
Curry leaves - 1 sprig
Red chilli - 3

Other Ingredients:
Onion small -1
Yellow pumpkin - 1 lb
Coconut - 2 tsp
Coriander leaves for garnishing

Method:
  1. Peel the outer layer and cut pumpkin into small bite size peices.
  2. Heat oil in a pan and add all the tempering items one by one.
  3. Then add onion and cook till becomes translucent.
  4. Then add yellow pumpkin and salt. Cover the lid and cook for 10 minutes.
  5. Do not overcook the pumpkin. If require sprinkle some water.
  6. Once the pumpkin is tender add coconut, coriander leaves. Switch off the heat.
