Brinjal Chutney

Ingredients:
1 tsp mustard seeds
1 onion
7-8 curry leaves
4 small brinjals
4 tomatoes
2 green chilli
1 tsp red chilli powder
2 tsp tamarind water
1 cup coriander leaves

Method:
Take oil in a pressure cooker,Splutter mustard seeds.
Add chopped onion and fry for a minute.
Then add curry leaves, chopped tomatoes, chopped Brinjal.
Number of brinjal and tomato should be equal, more brinjal will add bitterness to the chutney.
Then add chopped coriander leaves and green chilli.
Fry for a minute , then add salt, chilli powder, and enough water.
Cook for 2 whistles.
Then smash the chutney and serve hot.
