Thai fried rice

Ingredients:
Chicken breast - 1 pound
Cooked rice - 2 cups
Olive oil - 3 tsp
Eggs - 2
Onion - 1 small
Tomato - 1
Thai peppers (if you dont have go with regular green chilli) - 5
Adjust peppers according to your taste. I like my fried rice to be hot.
Spring onion - 2 stick
Chopped garlic - 6 cloves
Soy sauce (concentrate) - 2 tsp (If yours is normal soy sauce you can add some more)

Method:
  1. Slice chicken to approximately 1 inch pieces. Season it with salt and pepper.
  2. Pressure cook the rice. Use any type of rice. I use par boiled rice which works good for me.
  3. Heat oil in a pan. Cook the chicken in medium low flame and keep it aside.
  4. In the same pan, scramble 2 eggs with salt and pepper. Keep this aside.
  5. Use the same pan, saute onion, garlic and Thai peppers.
  6. Once done add chopped tomato and spring onion.
  7. Cook till the tomatoes are little bit mushy , add the chicken , cooked rice.
  8. Mix it well, add soy sauce and scrambled eggs.
  9. Keep stirring for 2 minutes. Thai fried rice is ready to be served.
