Seasoning:
Oil - 4 tsp
Ghee - 1 tsp
Cardamom - 1
Cloves - 4
Briyani Leaf - 2
Cinnamon - 1 inch
Fennel seeds - 1/2 tsp
Other Ingredients:
Onion small - 2
Green chilli slitted - 5
Ginger Garlic paste - 1 tsp
Mint leaves - handful
Coriander leaves - handful
Tomato small - 1
Thick Curd - 2 tsp
Coconut milk - 2 tsp
Chilli powder - 1/2 tsp
Mutton boneless - 1 pound
Salt as per taste
Garam/Briyani masala - 1 tsp
Kewera water - 1/4 tsp (optional)
Fried Onions - handful (optional)
Basmati Rice - 1 cup (soaked for 20 mins)
Method:
Heat oil and ghee in a pressure cooker.
Add all seasoning items listed above. Once splutters add onion and green chilli.
Fry till onion gets transparent, then add Ginger Garlic paste.
Then add mint leaves, coriander leaves and tomato. Cook for 2 mins and add mutton.
Add salt, briyani masala, curd and coconut milk.
Close the pressure cooker and cook for 5 whistles. Leave the pressure to leave by itself.
Then add soaked rice, kewera water, fried onion. Check for salt.
Cook for 2 whistle. Your briyani is ready.
