This is a Kashmiri recipe.
Good with: Naan, Chapathi
Seasoning:
Cloves - 3
Cinnamon - 1 inch
Bay leaf - 1
Cumin seeds - 1 tsp
Mix these masala in a cup of water:
Coriander powder - 1 tsp
Fennel powder - 1 tsp
Chilli powder - 1/2 tsp
Ground Paste:
Fried Cashews - 4
Other Ingredients:
Turmeric powder - 1/4 tsp
Garlic finely chopped - 6 (optional)
Ginger paste - 1/2 tsp (Dont add to much)
Curd - 3 tsp (beaten with water)
Baby potatoes - cooked and peeled
Coriander leaves - 1/4 cup
Salt - as per taste
Oil - 2 tsp
Method:
Add 2 tsp of oil and season the items listed above.
While cumin seeds are spluttering, Add Garlic and fry for 20 seconds. Garlic is optional but i like it to be added.
Add Turmeric and ginger paste.
Once you saute the garlic add the masala mix. (mmm could smell the aroma of Fennel seeds....just love it....)
Masala will be oozing out oil, Before it burns add curd.
Mix well and Leave the saute for 2 minutes.
Add potatoes, salt and some water.
Close the pan and cook it for 10 minutes.
Add cashew powder for thickening the gravy. This is also optional.
Garnish with coriander leaves.
