Bitter Gourd/Bitter melon fry

Ingredients:
Bitter melon/Bitter gourd  - cut into thin slices and remove seeds
Sliced onions - 1 small
Slit green chilli - 4
Ginger Garlic paste - 1/2 tsp
Sugar - 1 tsp
Coriander leaves - handful

Masala powders:
Turmeric powder - a pinch
Red chilli powder - 1/4 tsp
Coriander powder - 1/2 tsp

Seasoning:
Mustard seeds - 1/4 tsp
Urad dal - 1 tsp
Curry leaves - 5-6 leaves

Method:
  1. I soak the sliced Bitter gourd in salt water for 10 minutes to remove the bitterness.
  2. Heat oil in a pan, splutter mustard seeds, add urad dal, curry leaves, sliced onions and green chilli.
  3. Add ginger garlic paste and turmeric powder.
  4. Once the raw smell of ginger garlic paste is gone add bitter gourd.
  5. Saute the bitter melon for few minutes.
  6. Then add the remaining masala powder. Close the pan and cook for 10 minutes.
  7. Then add sugar and fry for some more time with Open lid
  8. Garnish with coriander leaves.
